Well, I didn’t think it would take a global pandemic to get me blogging again, but…here we are. I won’t rehash the stuff everyone is saying and what we’re all thinking, you’re seeing that everywhere as it is – all I will say is, you will hear no complaints here, only gratitude. Gratitude for my health, gratitude that I have a home to shelter in and that I have job security, gratitude that I’m not sheltering alone, and gratitude that I have plenty of food to cook and eat.

Chicken Tikka Masala
I’ve been wanting to make Chicken Tikka Masala for a while, and when I recently read the Grace Parisi recipe in Food & Wine I knew it was time. I’m just now realizing the coincidence that it’s quite, well…orange – perfect for Halloween time 😊 The chicken alone (without the sauce), which is marinated in yogurt and spices then broiled, is a revelation – and something I’ll definitely be making on its own again and again.
I modified the original recipe a bit, having also read the Cook’s Illustrated version and many comments/critiques on both recipes.
