So I’ve been having a bit of a no-cook summer…I’ve been traveling a lot, so haven’t been to the grocery store, AND the last thing I want to do when it’s 85 degrees out and I use minimal air conditioning is turn on the oven or stove. But, of course, that doesn’t mean I haven’t been eating!

Shaved Rainbow Salad
Another gorgeous summer Saturday and visit to the farmers market inspired me to throw together a light, beautiful shaved salad for lunch. By coincidence, I realized it includes red (radishes), orange (carrots), yellow (golden beets) and green (cucumber), so we’re going to call it a RAINBOW SALAD!
